Symptoms we get called for ## How it shows up - The blower is loud but smoke still crosses the room - Only the highest speed works, or only the lowest - The hood lights work and the fan does nothing - A rattle or hum starts at one speed and stops at another - The damper never opens, or never closes after the fan stops - Cooking smells reach the far end of the house Ventilation is the part of a professional kitchen that people notice last and complain about longest. A hood that is loud is not necessarily working, and a hood that is quiet is not necessarily broken. Airflow is the only thing that matters, and airflow is a system, not a component. ## Loud but useless The most common complaint we take is a blower that sounds powerful while smoke still rolls out the front of the range and drifts across the room. That is a capture problem, and it comes from one of four things: the duct run is too long or has too many elbows, the duct diameter is smaller than the blower needs, the filters are loaded with grease, or the house is too tight to give the fan the air it is trying to move. Grease filters are the free fix and we always check them first. Baffle filters that have gone dull and tacky have lost a serious fraction of their free area, and a dishwasher cycle brings most of them back. If the filters are clean and the noise is still not turning into capture, the problem is downstream. ## Make-up air A high-capacity blower pulls a real volume of air out of a house. That air has to come back in from somewhere. In an older Riverside or Avondale house with original windows and no sealing to speak of, it comes in through the building and nobody notices. In a newer Deerwood or Bartram Park house built tight, it cannot, and the blower simply starves. The fan spins at full speed against a partial vacuum, makes all its noise, and moves a fraction of its rated air. The tell is simple: crack a window near the kitchen and run the hood again. If capture suddenly improves, the hood is fine and the house needs make-up air. That is a mechanical contractor’s job, not ours, but knowing it is the answer saves you from replacing a blower that was never faulty. ## What actually breaks Blower motors fail at the bearing. The symptom is a hum or rumble that appears at one speed and disappears at another, because the resonance only lines up at certain revolutions. A motor that has been rumbling for months is on borrowed time and will usually seize during the busiest cooking week of the year. Speed control fails partially. Losing the middle speeds while the top and bottom still work points at the control module rather than the motor, because a dead motor is dead at every setting. Losing the fan while the lights still work proves power is reaching the hood, which is a useful thing to establish before anyone opens a wall. Backdraft dampers stick. A damper that never opens throttles the whole system and is easy to miss because it lives out of sight in the duct. A damper that never closes lets outside air, insects and humidity back down the duct into the kitchen, which in a Florida August is its own problem. ## Downdraft and island units Island hoods and downdraft ventilation have longer, more tortuous duct runs by their nature, and they are far less forgiving of a partly blocked damper or an undersized duct. When we are called to an island installation that has never worked well since the day it went in, the cause is usually in the duct design rather than in anything we can replace. We will tell you that plainly.
